When & How We Harvest Olives are picked during the first half of October which is considered early harvest as they are still bright green. These olives generally yield less oil but have the freshest taste profile and highest nutritional benefits.	How We Protect the Fruit Olives are stored in crates to enable air circulation and prevent heat. Olives are immediately transferred, stored in optimum temperatures and squeezed within 2-3 hours of being picked to preserve flavor to its utmost capacity.	How We Process Olives are cleaned and moved through a selection process where only the best olives find their way into the plant. They are then processed by mechanical means without heat in a clean machinery. Cleanliness is key as any adulterations would strongly impact the flavor of the oil.	How We Protect Your Purchase Olive oil is then stored in large air-tight containers in temperature regulated storage facilities. Our oils are bottled shortly after and sealed for protection. Our bottles are coated with UV filters while our special cap blocks air contact when sealed and minimizes exposure after opened.
