STUFFED PEPPERS
Ingredients: One 24 oz. jar of Pirro’s Pesto Pomodoro sauce, 4 bell peppers, 1 lb. ground beef, 2 eggs, 1 white onion, 5-6 cloves garlic, 1 tsp. each salt and pepper, 3 cups mozzarella, Parmesan and 4 fresh basil leaves (to top).
Preheat oven to 400. Dice onion and chop garlic. Slice top off peppers, deseed, and arrange in an oven-safe pan. In a large mixing bowl, combine ground beef and eggs. Add onion, garlic, salt, pepper, and 2 cups mozzarella and mix. Pour ¼ cup of Pirro’s Marinara Sauce into each pepper. Put ¼ cup of the ground beef mixture into each pepper. Top each with ¼ cup of mozzarella. Bake peppers for 30 minutes. Take out and top with a healthy amount of Pirro’s Marinara Sauce. Garnish with basil and top with Parmesan. Godere!
