Vegan Cashew Sun Dried Tomato Dip
INGREDIENTS
1 cup Sincerely Nuts Raw Cashew Splits
1 (8-ounce / 225 gram) jar olive oil-packed sun-dried tomatoes, drained, oil reserved
4-8 tbsp lemon juice 4-8 tbsp water
3-4 large garlic cloves
large handful of basil leaves
1 tsp smoked paprika
1/4 tsp salt
2 tbsp oil from tomatoes
Drain soaked cashews. Place in food processor with drained tomatoes, 4 tbsp of lemon juice, 3 garlic cloves, basil leaves, smoked paprika, salt, and oil. Process until smooth, adding the water little by little.
