When the army left, the tea needed to be dried quickly in order to reach the market on time; so the villagers used open fires of pine wood to dry the tea. The villagers took this tea to market and sold it to the Dutch as a “special” tea. To their surprise, the Dutch loved their smoky tea, and Lapsang Souchong was created. A smooth, crisp tea which yields a tarry and smoky taste, Lapsang Souchong goes well with smoked or barbecued meats.
