Time-Honored ProcessGrapes for Giusti’s balsamic vinegars are carefully selected for their high quality and delicate concentration of sugars and acidity, usually Lambrusco and Trebbiano varieties from the provinces of Modena and Reggio Emilia in beautiful Northern Italy. The grapes are then pressed and the fresh juice is boiled down to a thick, sweet syrup. The syrup then ages in a wooden cask along with the “Mother” vinegar. |
Aged in Centuries Old CasksThe heart of our production is a collection of 600 casks dating back to the 1600s, from where the purest extractions that create the unmistakable aroma of our balsamic vinegars are collected.
