Ham and Eggs with Seeds of Change Taco Roasted Chipotle Simmer Sauce
With this recipe, any time is a great time for ham and eggs. That’s because this delectable dish features organic Seeds of Change roasted-Chipotle simmer sauce and all your favorite Tex-Mex garnishes. And it only takes a few quick minutes to make.

Directions
1. In 10-inch skillet place Seeds of Change Taco Roasted Chipotle Simmer Sauce, Seeds of Change Quinoa & Brown Rice with Garlic packet, and diced ham pieces.
2. Heat over medium heat, stirring occasionally, until heated through (4 to 5 minutes); set aside and keep warm.
3. Meanwhile, in clean 10-inch skillet, heat 1 tablespoon olive oil over medium heat.
4. Add 2 eggs and cook either sunny-side up or over-easy.
5. To serve: place about ¾ cup Seeds of Change Taco Roasted Chipotle Simmer Sauce and Seeds of Change Quinoa & Brown Rice with Garlic mixture on plate and top with 1 cooked egg.
6. Garnish with corn chips, guacamole, sour cream, and chopped onions.
7. Repeat with remaining eggs.
8. Refrigerate leftovers.
