But What Is Freeze Dried Ice Cream? Freeze Dried Ice Cream is the result of Real Frozen Ice Cream Pieces after they make it through the lengthy process of sublimation and lyophilization! What's that you ask? The Freeze Drying Process uses sublimation and lyophilization to create a perfectly preserved product. The products that undergo this process have an amazingly long shelf life when stored properly of up to 25 years.
Sublimation is the process of a substance changing directly from the solid to the gas phase. During this process, the Ice Cream Pieces are frozen to a chilly -40 degrees.
Lyophilization is the process in which water is removed from the Ice Cream Pieces after they are frozen and placed under a vacuum, allowing the ice to change directly from solid to vapor. During this process, the Freeze Dryers slowly heat the trays of frozen Ice Cream Pieces creating water Vapor which is sucked out of the Ice Cream Pieces with a high powered vacuum pump.
