Original Date Lady Date Syrup and New California Date Syrup - What's The Difference?

The California Syrup is made with dates grown in the California Coachella desert, and the original with dates from Tunisia. The different environments and growing conditions attribute to each a distinctive flavor profile and color. The California syrup is thinner in viscosity which can be explained by a slower production process where the pectin is broken down further. More of a maple syrup viscosity if you will. The Original Date Syrup is thicker, more like honey, a bit slower on the pour. We would describe the California syrup as having more of a butterscotch note and the imported syrup, as being more reminiscent of brown sugar. Which do we prefer? Both!
