The Australian Carob Co. was established by Michael and Jam Jolley in the year 2000. Michael and Jam had a dream to grow, harvest, process, and package the world’s best quality, best tasting New Generation organic sweet premium carob. The Jolley’s planted grafted trees in 2000 on a 76-acre block of land, and today there are approximately 6000 trees encompassing seven different non-bitter, sweet varieties. The Jolley's watched their dream become reality and in 2011, and harvested their first commercial crop of carob. Carob pods which hang from the tree on branches, take just under a year to mature. The pods are harvested in March and April and taken directly to the manufacturing shed located on the property where they are allowed to naturally dry–to moisture levels of 10% or lower–for processing. They are then washed and processed in a state-of-the-art designed machine. When the kibble is sufficiently dried it can be milled into Raw or Roasted Powder, packaged in to Kibble Nibble, or processed into syrup. Today, The Australian Carob Co. is the largest commercial organic carob processor in Australia.
