Use a Charcoal Grill for Deep Smoky Flavor With all due respect to gas grills, charcoal grills simply infuse more flavor into meat. For a double dose of smoky flavor, use hardwood briquettes.	Direct Heat v. Indirect Heat Use direct heat for faster cooking foods like burgers, brats or hot dogs. Use indirect heat for slow cooking foods like ribs, brisket or picnic roast for that slow and steady smoky flavor.	Grill Preparation Preheat your grill 10-20 minutes before cooking Remember to always clean your grill grates before each use	Grilling Tools Always use tongs (or a spatula as a second choice) Never use a fork, you'll puncture the meat and let valuable juices escape Grill mitts are also a handy tool


Save Basting for the last 2-5 minutes of cooking If you're putting a sauce or other liquid over your meat, it's best to wait until it's almost done cooking to avoid burning the sauce and adding an unintended burnt flavor. Use a baster or brush to apply the sauce a few minutes before taking the food off of the grill.	Use a Meat Thermometer 130 degrees F for medium rare. 140 degrees F for medium. 150 degrees F for medium well. 160 degrees F for well done.	Let the Meat Rest Remove the steak about 10 degrees F before desired internal temperature. This lets the juices re-distribute throughout the meat.
