Gingersnap Cookie Sandwiches
Ingredients: 1½ Cups Shortening, 2 Cups White Sugar, 2 Eggs, ½ Cup Molasses, 4 Cups of sifted unbleached Flour, 2 tsp Baking Soda, 2 tsp Cinnamon, 2 tsp Cloves, 2 tsp Ginger
Directions: Cream the shortening and sugar. Once creamed, add in both eggs – blending the mixture. Add the sifted dry ingredients to this mixture. (The dough texture should be thick, not runny.) Place in the oven at 375 degrees F for 10-13 minutes. Yields 5 dozen. Finally, stuff with your favorite chilled ingredients from the Sweet Spot Ice Cream Maker to complete the tasty sandwich; now you're Chef'n!
