Our farmer in Japan switched to organic farming in 1987 and has 32 years of experience farming the best matcha organically. Ceremonial-Grade Encha Organic Matcha

Ceremonial matcha traditionally means that tea masters use their best matcha powder for the tea ceremony. Thus, ceremonial matcha should be the highest grade in a matcha collection and will differ across matcha brands. Culinary grade is from second or later harvests with much cheaper cost.

In the first harvest of each spring, our farmer selects the most tender, premium quality matcha green tea leaves, and grinds them as our ceremonial matcha green tea powder. It has a purely green color and the smoothest and richest taste to be considered ceremonial grade matcha.

Taste: Organic vs. Conventional

A well-whisked bowl of ceremonial Encha matcha tea starts with a smooth, clean and refreshingly-grassy taste, follows with a frothy and full-bodied texture, and finishes with a subtle sweet vegetal taste. If you have a sweet tooth, you might not like the grassy note in pure organic matcha with just water. Try matcha as latte.

Conventional non-organic matcha uses synthetic chemical fertilizers to make its taste sweeter. Synthetic fertilizers are prohibited by the USDA organic standards. First, the fresh leaves are steamed dry on the day of harvest to prevent oxidation.

Then, leaves are cut into smaller pieces and blown by air onto a two-deck conveyor belt. Lighter pure leaves are blown onto the upper deck. The heavier stems settle to the lower deck.

Afterwards, we manually pick out any remaining stems from the pure leaves.

Finally, we grind the pure leaves into super-fine Encha organic matcha powder.

Encha Farmer and Founder carefully evaluate all high-quality leaves from each harvest. The most tender leaves of each spring are used for Ceremonial-grade Encha. The standard high-quality leaves of each spring are used for Latte-grade Encha. The best leaves of the 2nd harvest (late June) are used for Culinary-grade Encha.
