Mac and Cheese
Ingredients:
- 1 tablespoon full cream milk powder , 3 tablespoons white cheese powder, 1 teaspoon all-purpose flour
- 2/3 cup pre-cooked and dehydrated macaroni, Salt, to taste, 1 tablespoon ghee
On the trail:
- Pour pasta into a pot; add in 1/3 cup water. Bring to a boil and season to taste.
- Reduce heat to medium and cook, stirring regularly, for about 5 minutes, or until rehydrated.
- Take the pot off the heat. Stir in milk and cheese sauce powder from the bag.
- Add ghee and mix well until it melts.

Cheese Dip
Ingredients:
- 2/3 cup white cheese powder , 6 tablespoons nonfat dry milk powder, 6 tablespoons dehydrated butter powder or flakes, 6 tablespoons flour, 1/2 teaspoon salt, 1/8 teaspoon white pepper, 1/4 teaspoon onion powder
- Combine the white cheese powder, nonfat dry milk powder, dehydrated butter powder, flour, salt, white pepper, and onion powder in a small bowl and mix thoroughly with a wire whisk.
Steps to Make It:
- Decant the mixture into a container with a lid and store in the refrigerator up to 6 months.
- To make the cheese dip using this recipe, combine 1 cup hot tap water with 1/2 cup Cheese dip Mix in a small saucepan over medium heat.
- Bring to a boil, stirring constantly with a wire whisk, until the mixture boils and thickens.
- You should have a complete cheese Dip.

White cheese Sauce Mix
Ingredients:
- 2 cups nonfat dry milk powder, 1 cup flour, 2 teaspoons salt
- 1/8 teaspoon white pepper (optional), 1 cup butter (or margarine or oil spread)
Steps to Make It:
- In a medium bowl, combine the dry milk powder, flour, salt, and white pepper (if using) and mix well with a whisk.
- With a pastry blender or two knives, cut in the butter or margarine until mixture resembles cornmeal and no large pieces of butter remain.
- Pour into an airtight container and store in the refrigerator. Use the white sauce mix within 2 months.
- To make white sauce using the mix, combine 1/2 cup mix and 1 cup cool water in small saucepan.
- Cook over low heat until smooth, stirring constantly with a whisk. Season as desired.
