About our Organic Coconut Sugar:

Anthony’s Organic Coconut Sugar, makes baking an organic, natural, unrefined experience. Our Organic Coconut Sugar is made from a two-step process using sustainably sourced coconut palm nectar from Indonesia. First, our farmers make a cut in the flower or bud of the coconut palm and the liquid nectar is collected. Then, the collected nectar is gently heated to remove water and create the golden brown crystals. The great thing about Coconut Sugar is that it can be substituted in a 1:1 ratio with any other sugar, keeping a subtle sweetness, with a slight caramel flavor. It adds a mild yet delicious flavor and slightly more crisp texture to baked goods, and it is absolutely perfect for homemade caramel. In addition, our Organic Coconut Sugar is a wonderful unrefined alternative to traditional white or brown sugar!

Coconut Sugar Caramels

Ingredients:

  • 2/3 cup Anthony’s Coconut Sugar
  • ⅓ cup maple syrup
  • ⅓ cup coconut cream
  • ⅓ cup butter
  • ⅓ cup Anthony's Coconut Oil
Instructions:
  1. In a small saucepan, combine the coconut sugar, maple syrup, and coconut cream; mix well.
  2. Bring to a simmer over low heat.
  3. Simmer for 15 minutes.
  4. Transfer to a glass bowl and let cool a minute.
  5. Add the butter and coconut oil; mix well.
  6. Transfer to a greased loaf pan.
  7. Freeze until set.
  8. Cut into squares.
  9. If not eating immedietly, wrap caramels in wax paper or plastic wrap.
  10. Store in an airtight containter in the freezer.

Prep time: 5 minutes
Cook time: 15 minutes
Yield: 1 doze

Mango & Coconut Cassava Flour Scones

Ingredients:

  • 1/2 cup cold butter, cubed
  • 2/3 cup Anthony's Cassava Flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup Anthony's Coconut Sugar
  • 3 tablespoons Anthony's Coconut Flour
  • 1/2 cup finely diced Anthony's Dried Mangoes
  • 1/2 cup Anthony's Unsweetened Shredded Coconut
Instructions:
  1. Preheat oven to 350° Fahrenheit and grease a baking sheet.
  2. Place the butter in a large mixing bowl.
  3. In a small bowl, combine the cassava flour, baking soda, and salt; mix well.
  4. Cut the cassava flour mixture into the butter until the mixture looks like very course crumbs.
  5. In another bowl, whisk together the eggs and coconut sugar.
  6. Pour the egg mixture into the butter and cassava flour mixture. Add the coconut flour; mix well.
  7. Fold in mangoes and coconut.
  8. Form dough into a 1" thick round on the prepared baking sheet.
  9. Cut into 8 wedges; do not separate the wedges.
  10. Bake for 15-20 minutes.
  11. Cool and enjoy!

Cook time: 20 minutes
Yield: 8 scones

Gluten-Free Vanilla Wafers

Ingredients:

  • 1/3 cup Anthony's Coconut Sugar
  • 1/2 cup cold butter, chopped
  • 1 egg
  • 2 teaspoons
  • 1/2 cup Anthony's Cassava Flour
  • 1-1/2 cups Anthony's Blanched Almond Flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda

Instructions:

 

  1. Preheat oven to 350° Fahrenheit and grease a large baking sheet.
  2. In a mixing bowl, cream together the coconut sugar and butter.
  3. Add egg and mix well.
  4. Add cassava flour, almond flour, salt, and baking soda; mix well.
  5. Roll heaping teaspoonfuls of dough into balls and flatten to 1/3" thick on the prepared baking sheet.
  6. Bake for 10-15 minutes.
  7. Cool and enjoy!
