Chicken Fajita Queso Dip with Mission Strips Tortilla Chips

Ingredients

· 1 chicken breast, cut into strips

· 2 tsp. chili powder

· ½ tsp. each cumin, onion powder, garlic powder

· 1 tbsp. cornstarch

· 2 tbsp. extra virgin olive oil

· Lime juice to taste

· ½ cup diced green pepper and diced onion

· ¾ lb. shredded jack cheese, ¼ lb. shredded fontina

· 1 ¼ cup half-and-half

· 1 tsp. red pepper flakes

Instructions

To cook the chicken:

In a resealable plastic bag, combine the cumin, onion powder, garlic powder, cornstarch, and 1 tsp. chili powder. Add the oil and chicken and mix. Seal and refrigerate for 15-60 minutes. Heat 1 tbsp. of olive oil in a non-stick skillet, then add the chicken once marinated. Squeeze lime juice to taste. Cook the chicken through (about 6 minutes). Remove and set aside.

To cook the queso:

Heat the half-and-half over medium-high heat in a saucepan until simmering. Reduce the heat to low and begin adding the cheese in batches while constantly stirring. Once melted, stir in the red pepper flakes, 1 tsp. of chili powder, and salt and pepper. Chop the chicken into 1-inch cubes and add to queso. Stir to combine. Pour the queso into a large serving bowl and enjoy.
