The story began with a relationship built around a love for genuinely good coffee – and a desire to dig deeper into the unique alchemy behind the coffee experience. In a partnership that spans decades, owners Ridha Benabid and Patrick O’Brien have always been connected through coffee. Their passion for bringing quality coffee to be enjoyed for any occasion first began when Ridha was distributing Mister Espresso coffee to Patrick’s coffee catering company.

As their friendship grew so did their ambitions. Instead of distributing someone else’s coffee they began the long journey of learning the art behind roasting coffee. The first three years of the company was dedicated to developing the perfect combination of blends from origins all over the world. Coffee is placed in a filter and hot water is run through it to make the coffee. The coffee loses its subtle nuances quickly. It has the advantage that it can make large batches of coffee at a time.

Pour-Over Place filter in brewer before pouring in the coffee grounds. Pour-over coffee results in a clean and smooth finish.

Percolator Water is run over coffee multiple times. The coffee that results tends to be fuller bodied and richer than a drip coffee maker.

French Press The aromatics from the coffee remain in the beverage, instead of evaporating. The result is nuanced coffee, rich in subtle flavors.

Moka Pot This is a stove-top coffee maker the uses a steam pressure chamber to push boiling water through coffee. This is a great way to make an espresso-like coffee without needing an espresso maker.

Tips for making coffee in general:

Make sure the grinder and coffee maker are clean. Remove any residue from previous makings of coffee by rinsing it with hot water and then drying it with a clean towel. Then, grind the coffee beans right before you brew them. Studies show that 60% of the aroma is lost fifteen minutes after grinding the beans, so be careful of the timing. The size of the grind is important as well; the smaller the grind, the stronger the flavor. If your coffee is too flat, the grind maybe too coarse and under-extracted. If your coffee is overly bitter, the grind may be too fine and over-extracted.

A good rule of thumb is two tablespoons of ground coffee for every six cups of water. These numbers, however, can be adjusted depending on how strong you like your coffee.
