Mid-Autumn Festival is a big thing in China, and eating mooncakes with family members is a must. It’s the the 15th day of the 8th month of the lunar year – the middle day of autumn and the day of the full moon. It’s the day that family members sit together and enjoy mooncakes and a peaceful night with the brightest moon.

Mooncakes symbolize family reunion. In Chinese culture, roundness symbolizes completeness and togetherness. A full moon symbolizes prosperity and reunion for the whole family. Round mooncakes complement the harvest moon in the night sky at the Mid-Autumn Festival. The mooncake is not just a food.

Unlike the miniature mooncakes you typically find in recipes online, the real mooncakes in China are huge. They use a minimal amount of dough so that the outside layer is paper thin, enclosing a giant, greasy, sweet block of filling that is usually made with tons of sugar and lard. They can be very delicious if cooked properly with fresh ingredients.

Making the Mooncake Dough

Roll the crust dough into a ball, flatten the dough with palm. The dough should not be very sticky. If you feel a little sticky, lightly flour your hands. Set one filling ball in the middle of the crust. Wrap the edge evenly around the filling ball, and gradually pull up the edge between your thumb and index finger. Gather the edge over to seam and pinch the filling on top. Roll it into a ball, and a mooncake dough is done. Depending on mold size, quantities for filling and crust may differ.

Choosing Your Favorite Pattern

Take a clean Powerful Mooncake Press. This is how this work. Find one pattern you prefer, put the flower part down side, insert it into the mold, find two knots on it, and then secure by switching the handle on top.

Making Mooncakes

Get one mooncake dough, gently flour it, and roll it into a slightly longer oval with your hands. Gently set it in the press. And then press it down on the baking sheet. Once down, gently lift the tool. When you are pressing the mooncake, set the tool with one hand, and then press it down with the other hand. Don’t press it too hard, or your dough will squeeze out from the bottom of the mold.
