Autumn Vegetable and Grain Sauté
Here’s an easy way to enjoy the fresh flavors of the fall season! This delicious combination of butternut squash, parsnips, cranberries, and whole grains will warm you up when the autumn winds begin to blow.
Prep Time: 15 minutes Total Time: 30 minutes
Servings: 8.
Directions
1. In 10-inch skillet, melt butter over medium high heat.
2. Add squash, parsnips, and onion.
3. Increase heat to high and sauté 1 minute.
4. Add broth, sage, salt, and pepper.
5. Heat to boiling. Cover, reduce heat to medium.
6. Cook 10 to 12 minutes or until squash is almost tender.
7. Stir in Seeds of Change Seven Whole Grains and cranberries.
8. Cook and stir 2 minutes longer or until broth is absorbed and rice is heated through.
