Safety:
A scoring lame is not a fancy gadget. Safety is the most important aspect of a good scoring lame.
Despite of its simplicity and lower manufacturing cost, we do not make and market any stick-tension-mount scoring lames. These types of lames use the tension of the blade to mount itself to a metal strip, with no external locking mechanism to further secure the blade. Each Mure & Peyrot model is designed with a locking mechanism to prevent the blade from wobbling, or even worse, the accidental discharge of the blade while scoring.
Accuracy:
It is difficult, if not impossible, to achieve different types of cuts with just one kind of lame. For example, straight-mount lame and curved-mount lame often result in different peels and end appearance. We have developed a variety of lames to address all your scoring needs.
Sharpness:
We have been making knives and blades for over one hundred years. Our replacement blades are made of quality stainless steel, specifically for our bread lame, right here in France.
