1. In large nonstick skillet, heat oil over medium-high heat. Cook and stir chicken, peppers, and onion 4 to 5 minutes or until vegetables soften and chicken is no longer pink.

2. Stir in bean sprouts and pea pods; cook 1 minute. Stir in water, soy sauce, and fish sauce.

3. Meanwhile heat rice as directed on package. Stir into chicken mixture, heating about 2 minutes until thoroughly combined. Garnish with sesame seed.

1 lb. boneless skinless chicken breast, cut in ¾-in. pieces

2 large red or yellow bell peppers, chopped

1¼ cups chopped red onion (1 large)

2 cups bean sprouts (about 8 oz.)

1 cup snow peas, cut in ¾-in. pieces

2 tbsp. each: water, light soy sauce, fish sauce, vegetable oil

Instructions

Servings: 8 Prep: 5–15 minutes

1. Heat a large sauté pan, add oil and ground turkey.

2. When turkey has broken apart stir in pinto beans, seasoning and enchilada sauce. Mix well and heat until turkey is fully cooked.

3. In separate pan scramble eggs to desired doneness.

4. Heat pouches of rice in microwave according to package directions. Set aside.

5. Warm tortillas in a sauté pan or in the oven.

6. Place rice and egg on bottom of tortilla and top with ground turkey and bean mixture. Divide mixture to make 6–8 wraps.

7. Top each with cheddar cheese.

8. Fold in sides of tortilla and wrap to completely enclose the filling. Cut in half or leave whole before eating.
