Today, the New Mignon Silent is a proper range of product composed of 3 versions; Specialita is the version conceived for baristas: 55 mm burrs for higher grind dispersion speed, all-purpose “Hands-Free” fork and display Touch with 2 programmable doses plus continous mode.

ACE System Conceived to prevent the clumps' development and eliminate the electrostatic charge of ground coffee, the ACE System is the common denominator in every Eureka on-demand grinder. Due to its regulating action over the coffee outflow, ACE System ensures an incomparable cleanliness and dose consistency. A wider chute design with Eureka's anti-clumping system makes for fluffier grounds.	Espresso & Brew The special burrs design conceived by our engineers offers a grinding technique suitable for the preparation of both Espresso and all the Filter coffee varieties. With the biggest burrs available on a Mignon, the Specialita's hardened steel flat burrs make short work of coffee beans. It sounds like a small upgrade, but the grind quality with the Specialita's 55mm burrs is a nice step up from the Mignon's stock 50mm discs.

Stepless Micrometric Regulation System

Patented by Eureka, it assures incomparable setting precision and saving of time and coffee. The Micrometric system with infinite adjustment points, the only one based on the lower burr repositioning, promises incomparable grinding performances, and allows to carry out maintenance operations without losing the grinding setting. Although it is stepless, it has a scale on it, which makes the whole process much easier, and keeps the grinding precise and consistent.

55mm Burrs for Higher Productivity

This increase in burr size translates to improved grind consistency and cafe-quality shots. They’re also significantly better at mitigating heat when pulling successive shots which means you can impress every guest at your next dinner party. Despite this bump in burr size and blazing fast grind times, the Specialita is still much quieter than most espresso grinders and nearly as quiet as the Silenzio while retaining the same small footprint.

Featuring a beautiful white-on-black touchscreen display with two timed dose settings and the same precise “micro-metric” adjustment. This increase in burr size translates to improved grind consistency and cafe-quality shots. The touchscreen is resistive, meaning it has a soft, flexible screen. You'll need to take care to press lightly.
