My first encounter with the delectable Danish dish was at a street fair in Sacramento California. My friends and I were in Old Sacramento enjoying the ambiance of the city when we came up to a tent with a cast iron pan that stretched for miles. There was a crowd around the tent where many were watching the baker cook a round pancake ball. This was something that many had never seen before and the crowd was restless with excitement. As I listened to the orders being shouted to the baker, several caught my attention. Some asked for jam or jelly, while others just wanted cinnamon and sugar sprinkled over the top. All of them sounded good and with the smell of fresh pancakes in the air my mouth started to water. I’ll never forget the first one I saw. The honey and butter was dripping down off the pancake ball. It ran down the persons fingers and fell onto the pavement. Just as they popped it into their mouth a quick gleam of butter shined from the corner of their mouth. I was calling my name…at that moment, I had to have one and I wanted to try them all.
As we waited in line, the baker began to give us a short history lesson. Many were unfamiliar with Aebleskiver’s and the baker was doing her best to keep up with the orders while also giving a history lesson to any who would listen. My friends and I listened intently as the baker started off with her history lesson: “It is known that this dish was first created by the Viking clans because of their love of pancakes. Once, after a long battle, the clan returned to their camp and needed to eat something to regain their strength. One of their favorite dishes was pancakes. With their helms, shields, and armor battered and broken, the Vikings poured the batter over their dented shields and what came out of it was known as an Ableskiver.”
