Burger Ingredients:

10 slices of Smoked cheddar cheese
10 Potato hamburger bun, toasted
3.75 lbs of Beef, ground, 80/20, formed into 6 oz. patties
1 qt of Bourbon Mayonnaise, prepared
15 oz of Mushroom-Bourbon Sauce, prepared

Whiskey Rebellion Burgers

Prepare Burgers: Cook the burgersto desired doneness, top with cheese until melted. To assemble, spread 1 Tbsp Bourbon Mayo on each side of the bun, then top with Bourbon-Mushroom Sauce and top of bun.

Bourbon Mayonnaise: Simmer 1.5 cups bourbon until reduced by half. Combine 4 cups of Hellmann's Real Mayonnaise and 1 Tbsp of reduced bourbon and pepper; whish to incorporate. Reserve refrigerated.

Mushroom-Bourbon Sauce: Render 0.50 lb of diced bacon, set aside. In excess bacon grease and 1 Tbsp of butter, sauté 1 large diced onion and 1lb of cremini, sliced mushrooms until slightly softened. Add 3 cloves of chopped garlic and deglaze with bourbon. Add 1.50 cups of heavy cream and 2 Tbsp of fresh, minced rosemary and simmer until reduced and slightly thickened, about 5 minutes. Season to taste with salt and pepper. Hold hot for service.
