· Bees collect nectar & pollen from flowers to make honey.  Most of the flowers bees use for our honey are from wild organic flowers.

· Bees use the  nectar & pollen to make  honey in the honeycomb cells. They cap the cells off with wax to store the honey. Hives “catch the bloom” by moving the bees to special locations throughout Florida. Different flowers bloom at different times.  By moving the hives to catch different blooms, we get unique honeys

• Each honey has a unique taste and character.  We encourage you to try them all and find your favorite!
• Our Wild Flower honey is our everything pizza.  Any time we have a few gallons left in a drum we dump it into the Wild Flower batch.  
• Wild Flower is always evolving and different with a blend of our current Florida honeys.

· 8-10 wooden frames are placed in each box on top of the hives called SUPERS.”  Bees use these supers with frames inside to build their

honeycomb & store all the wonderful honey.

· The supers are then removed from the main hive and brought into the extraction room to collect the honey.

· The wax capping is removed from the comb and the frame full of honeycomb is spun in the extractor to sling out the honey.

• We do not use PIPES, CONVEYORS, or FILTERS to process and bottle our honey.  We use the simplest process possible!  We let it gravity drip nice and slow  through a 200 millimeter screen just to take out the large hive particles that mixed in the honey from the extraction process.  It’s natural &  really raw.
• The only thing between your bottle of honey and the hive is a simple 200 millimeter screen. Our honey tends to crystallize quickly and turn into a solid. But that’s a good thing!  That means its real! Just warm the glass jar in hot water to reliquify.
• Honey naturally wants to crystallize and turn into a solid.  Most honey producers do not like their honey to crystallize because it does not look as nice as liquid honey in stores. 
• Preventing honey from crystallizing on store shelves is the main reason producers heat & filter honey.
