Origins:
After failing to find quality, natural products for her family and clients of her retreat in Chiang Mai, Thailand, Jang Bauerle decided to take matters into her own hand, and teamed up with Singaporean Daphne Hedley to found Mekhala. Mekhala has since grown into a well-loved Singaporean/Thai whole foods brand that produces organic, all-natural, gluten-free, vegan-friendly foods made with only the best ingredients. Based in Singapore, we make our products in our own facility in Chiang Mai, where we source beautiful ingredients from local farmers. We also provide good working conditions and fair practices for women from the marginalised Burmese Shan community to improve their welfare, and we have developed a system that allows us to hire even those who are illiterate .

Yellow Beef Curry
Great for:

Time: 120 minutes
Instructions:
(Serves 2-4)
1. In a casserole pot, heat up some oil and brown 300gm of beef shin or chuck chunks. Remove and set aside.
2. Add a little more oil and 200ml coconut cream to the pot. Fry for a while then add 1 heaped tbsp of Mekhala Yellow Curry Paste and stir through.
3. Add 400ml water and return beef to the pot. Bring to the boil then lower heat and simmer until beef is almost soft (about 45 minutes).
4. Add 2 to 3 potatoes (skinned and quartered) and simmer for another 30 minutes.
5. Enjoy with toasted baguette bread or steamed rice.
Spiced Chick Pea Cauliflower and Smashed Avocado Pita
Ingredients
(Serves 2-3)
1 tin chick peas, drained
1 ripe avocado, smashed and squeeze of lemon
1/2 cup cauliflower florets
1+1 tblsp cooking oil
1 tblsp Mekhala Organic Yellow Curry Paste
1 tspn ground cumin
4 gluten-free tortilla wraps
1/2 cup greek yogurt + 1 tspn ground cumin
Method
1. Mix chick peas with Mekhala Organic Yellow Curry Paste.
2. Heat oil in a skillet or fry pan, then quickly fry chick pea mixture until lightly coloured (just to warm up the spices and release the flavors). Set aside to cool.
2. In the same pan, add remaining oil, and toss in cauliflower and ground cumin. Salt to taste.
3. Lay out tortillas. Layer with smashed avocados, chick peas, cauliflower and a dollop of yogurt. Dust with more ground cumin or sumac.
4. Wrap and enjoy!
