PROCESS + VARIETY: Shade-grown catimor coffee cherries are sun-dried for 12-15 days, then bagged.

Single Roast - every batch comes straight from only this region
AAA/AA graded RFA certified
Grown in Zambia's Northern Province, in volcanic soils at high altitudes
Produced from trees of the Bourbon and Catimor varieties of Arabica
Natural, sun-dried process

How It's Processed:

The ripest shade-grown coffee cherries are chosen at the mill.
The chosen coffee cherries are sun-dried on raised African beds for 12-15 days.
During their time on the beds, the coffee cherries are raked and turned periodically during the day to ensure a consistent drying process. They are covered during high sun times - 12pm-3pm - to protect them from sun damage. They are covered again after sundown to protect them from rainfall and moisture.
Once dried, the coffee is milled, graded, sorted, and handpicked before being bagged in GrainPro for export.
