Course sharpening: is used for repairing blunt knife or serious damaged knife. Place knife on 1 stage, respectively on left and right sharpening grooves. Sharpen the knife from the bottom to the top in a constant speed(3-5 seconds for metal knife, 6-8 seconds for ceramic knife).
Fine honing: is used for knife maintenance. Place the knife on 2 stage and do the same way as the stage 1. This step can eliminate the burrs on the knife and polish the knife.It is recommended to do it approximately once a week to keep your blade sharp at any time.
