First, the blades are formed through cold isostatic pressing, which creates a high-density ceramic that’s twice as sharp as steel and comparable in hardness to a diamond—much stronger than traditional “hot” process ceramics. Then, one by one, our blades are hand-shaped and meticulously rounded. To avoid blunting—a common pitfall of ceramic blades—simply avoid using the knives improperly, such as on hard cheeses, boned meats, or with chopping on non-cutting board surfaces.
