This coffee has a very pleasant, creamy and silky body, without bitterness. The aftertaste is lasting and sweet, whether brewed as filter coffee or espresso.

Filter Coffee or Drip Coffee If you enjoy a balanced coffee, use a 1:15 coffee to water ratio when brewing your filter coffee. If you prefer a strong coffee, use a 1:13 coffee to water ratio.
Aeropress: the 30-30-30 Method Every Aeropress fan should try Mini Me, as it "shines" as an Aeropress brew. Whether the coffee is for you or a gift for another, follow this recipe to brew a delicious cup of coffee:
Put the filter in and set the Aeropress over a coffee mug or a coffee decanter;
Add 0.7oz of medium-fine ground coffee into the chamber;
Pre-heat water to 195F;
Wet the grounds for 30 seconds (bloom the coffee);
Fill the chamber of the Aeropress to the top;
In a fast motion, stir the liquid and insert the Aeropress plunger. Do not press the plunger yet;
Let it steep for 30 seconds;
Start pressing the Aeropress plunger slowly to complete the extraction process in 30 seconds;
Do not press the plunger completely to the end. Stop as soon as you hear the hissing sound to prevent over-extraction.
Espresso For espresso extraction, use a 1:2 coffee to water ratio. If your espresso machine allows you to set the water temperature via espresso PID, choose 190F. Follow the Specialty Coffee Association of America (SCAA) formula, for which your final output will be a 25-35ml (.85-1.2 ounce) espresso beverage. The coffee grind level should be chosen to allow for a 20-30 second brew time.

Usually, a coffee cherry contains two seeds that grow in tandem. Each seed develops into a coffee bean. An example can be seen above. The right, roasted coffee bean is a typical coffee seed.
Sometimes, especially at the tips of coffee branches, one of the seeds in a coffee cherry is missing. The existing seed can then occupy the full space available, becoming more round. This round bean is called 'peaberry' (left coffee bean in the picture). A peaberry coffee bean is typically smaller than a regular bean and it is somewhat rare. At our farm, only 5-8% of our coffee yield is composed of peaberries.
My grandparents and uncles noticed that these rare coffee beans were packed with flavor. That knowledge was passed to my dad and to myself. Today, we are happy to share it with you.
