Step Four - Turn up the Heat!
Reattach the top of the percolator to the base and place on your stove - This is where the process truly makes or breaks your brew, so diligence is key!
A percolator works by filtering boiling water up through the coffee grounds and into the top chamber. This occurs repeatedly throughout the process, increasing in strength and flavour with each cycle. The true artistry in creating the perfect finished product comes in maintaining the right temperature for the right amount of time - we want our water to be just boiling enough to carry up through the coffee, but not so hot that the water in the top chamber begins boiling as well.
Once the bubbling begins, set a timer for 8 minutes - again, you may come to vary this depending on your tastes; just remember that, the longer you leave it, the stronger the coffee will be.
