Driven by the family entrepreneurial spirit and founded in 2007 by Chantal Van Winden, her husband, Raymond Durivage, and members of their family. Oliméga has always strived to perpetuate and develop the farm with, as the primary objective, respect for the terroir and constant improvement.

As farmers, we are very concerned by the respect for our environment, for our own health and also to maintain the richness of our soil which the quality of our camelina crops depends on.

As a result, we practice a reasoned agriculture with the respect of nature. We intend to respect our terroir at its most and to intervene as little as possible. Oliméga is the only producer of camelina in Quebec. Certified GMO-free and GSFI, we produce and bottle everything at the farm. Our facilities are located south of Montreal, in Saint-Édouard-de-Napierville. We cultivate over 200 hectares and our organic crops are located in Saguenay, north of Quebec.

Camelina oil binds perfectly to the aqueous phase and allows to obtain mayonnaises

with unctuous and stable textures. For a vegan mayo, only replace the eggs with camelina seeds.

HIGH TEMPERATURE FRYING

Ideal with stir-fries and grills

Camelina oil has a smoke point of 475 degrees Fahrenheit. It can be used for intensive frying for up to 14 days without being altered. It is an oil that tastes neutral and is less grassy when heated at high temperatures, but still keeps a delicate aroma. It is ideal for frying!

FINISHING & VINAIGRETTE

Substitute for olive oil, it is the best finishing oil. Perfect pairing with root and cruciferous, vegetables, fish and shellfish. The taste of fresh asparagus and herb is ideal for finishing dishes.
