A small hole about 3/16" to 5/16" in diameter is drilled into the tree, and a spout is gently tapped into the hole. Sap collection is done through systems of tubing and pipeline. Throughout the season, the tubing systems are inspected for leaks and damage. One tree will produce about one quart of syrup per season.
Boiling
The sap from a maple tree has between 1.5 to 3% sugar content. The process of boiling the maple sap evaporates the water, caramelizing the sugars and concentrates the maple flavor.
Grading and Packaging
Once maple syrup has been drawn off the evaporator, it is filtered, graded and pumped into drums for storage. Syrup is selected for color and flavor, heated, filtered and packaged into smaller containers.
Cooking with Maple
Maple syrup is used for as an ingredient, sweetener, and a topping. It is the perfect breakfast topping on pancakes, waffles, and French toast. Great over fruit, in yogurt, coffee and tea. Use in a glaze or a marinade.
