Making your own maple syrup is much easier than you think! If you can run a drill and boil water, you already have the skills you need. The process is not complicated and you can easily learn everything in one season. Our goal is to give you the tools and instructions you need to become a sugarmaker. Boiling Time!

Pure maple syrup is made when the sap's water is evaporated out through boiling. Typical yield is 40-to-1 so 40 gallons of sap will boil down to one gallon of syrup. Most people start their boil outside with an outdoor cooker or evaporator fueled by propane or wood. This process can take a few hours and can be a sticky process (so not great for inside kitchens!). The final stage of boiling can be done inside on a regular stove. You'll need a good candy thermometer to monitor the progress to 219°F; heavy-duty pans; potholders; and jars with lids for bottling.

Filtering and Bottling

During boiling, sap is filtered to remove sugar sand (aka niter), a natural sediment that can make syrup cloudy. Filtering is a quick process but requires special filters designed for sugarmaking. We've included one-quart filters in our kits because they're easier to handle by yourself. Syrup is filtered once at about 216°F; then boiled further in a smaller pan until it reaches 219°F; then filtered again right before bottling. Once sealed, there is no additional processing (such as hot water bath) necessary. Pure maple syrup can be stored indefinitely on the shelf but once opened should be refrigerated and used within 3 months.
