Their fatty acid composition is largely unsaturated fats (13gr. of unsaturated fat and only 1gr. of saturated fat) with monounsaturated fatty acids being 67%. Almonds also contain a variety of phytonutrients including phenolic acids, phytosterols, and polyphenolic compounds such as flavonoids and proanthocyanindin.
