Yield: 420.86 ounce (8-1/2 ounce each).
Serves: 48.
Preparation time: 20 minutes.
Cooking time: 10 minutes.
Ingredients:
1 gallon Water.
1 bag Trio Brown Gravy Mix.
13 pound (34-1/2 cups) Potatoes, large, skin on, scrubbed and rinsed.
14 cups, Mozzarella cheese, medium diced.
Preparation Steps:
1. Pre-heat fryer to 275°F.
2. Prepare Brown Gravy Mix according to label directions, set aside and hold warm.
3. Using a French fry cutter or a knife, cut potatoes into a medium batonnet (1/4 inch x 1/4 inch x 4 inch), submerge in cool water.
4. Drain completely, removing all excess moisture. Fry in small batches, until just soft, approximately 5 minutes. Drain on wire rack over a sheet pan.
5. Increase fryer temperature to 375°F.
6. Fry in small batches, until golden brown and crispy, approximately 3-4 minutes. Drain fries on a wire rack over a sheet pan.
7. To serve: Ladle Brown Gravy over fries and top with of mozzarella.
Chef's tip:
Garnish with fresh parsley, rosemary or thyme if desired.
